Blueberry Swirl Yogurt Bites
Ingredients
For the Yogurt Base:
1 cup Greek yogurt (plain or vanilla)
2 tablespoons honey or maple syrup
1/2 teaspoon vanilla extract
For the Blueberry Swirl:
1/2 cup fresh blueberries
1 teaspoon lemon juice
1 tablespoon water
Instructions
Prepare the Blueberry Swirl:
In a small saucepan over medium heat, combine the blueberries, lemon juice, and water.
Cook for 3–5 minutes, stirring occasionally, until the blueberries break down and the mixture thickens slightly.
Remove from heat and let it cool for a few minutes.
Make the Yogurt Mixture:
In a medium bowl, mix the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth.
Assemble the Bites:
Spoon the yogurt mixture into silicone molds or an ice cube tray, filling each about 3/4 full.
Add a small spoonful of the blueberry mixture on top of each yogurt portion.
Use a toothpick or skewer to gently swirl the blueberry sauce into the yogurt.
Freeze:
Place the molds or tray in the freezer and freeze for at least 2–3 hours, or until fully set.
Serve:
Once frozen, pop the bites out of the molds and enjoy! Store in an airtight container in the freezer for up to 2 weeks.
