Blueberry Fluffy Cottage Cheese Cloud Bread
Ingredients
1. 3 large eggs, separated
2. ½ cup cottage cheese, blended until smooth
3. ¼ teaspoon cream of tartar
4. ½ teaspoon salt
5. 1 tablespoon cornstarch or arrowroot powder (optional)
6. 1 teaspoon honey or a pinch of sweetener (optional)
7. ¼ cup fresh or frozen blueberries, chopped if large
Instructions
1. Preheat oven to 350°F (180°C). Line a baking sheet.
2. In a medium bowl, whip egg whites and cream of tartar until stiff peaks form.
3. In a separate bowl, mix cottage cheese, egg yolks, salt, and cornstarch (if using).
4. Fold egg whites into cottage cheese mixture until combined.
5. Gently fold in blueberries and honey (if using).
6. Spoon mixture onto prepared baking sheet, forming 6-8 clouds.
7. Bake 18-20 minutes or until lightly golden.
8. Remove and let cool on a wire rack.
Tips
1. Use room-temperature eggs for best results.
2. Don’t overmix egg whites or cottage cheese mixture.
3. If using frozen blueberries, thaw and pat dry before using.
