Ingredients
For the Fish Bites
1½ lbs (680g) cod, haddock, mahi-mahi, or tilapia, cut into bite-sized pieces
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
For the Herbed Tartar Sauce
1/2 cup mayonnaise
2 tablespoons finely chopped dill pickles
1 tablespoon fresh dill, chopped
1 tablespoon fresh parsley, chopped
1 teaspoon lemon juice
1 teaspoon Dijon mustard
1/4 teaspoon garlic powder
Pinch of salt and pepper
Garnish
Lemon wedges
Fresh parsley
Instructions
Pat the fish pieces dry with paper towels and place them in a mixing bowl.
In a small bowl, combine the paprika, smoked paprika, garlic powder, onion powder, oregano, thyme, salt, pepper, and cayenne.
Drizzle the fish with olive oil and toss with the seasoning mixture until evenly coated.
Heat a large skillet over medium-high heat. Add a small drizzle of oil if needed.
Cook the fish bites in a single layer for 2–3 minutes per side until blackened on the outside and flaky inside. Work in batches if necessary.
While the fish cooks, prepare the tartar sauce. In a bowl, mix together the mayonnaise, pickles, dill, parsley, lemon juice, Dijon mustard, garlic powder, salt, and pepper.
Chill the tartar sauce until ready to serve.
Transfer the fish bites to a serving platter and garnish with fresh parsley and lemon wedges.
Serve immediately with the herbed tartar sauce on the side.
