Black Pepper Chicken

Ingredients:
- 1 lb (450g) boneless chicken breasts or thighs, cut into bite-sized pieces
- 2 tbsp black pepper, freshly ground
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp cornstarch
- 2 tbsp vegetable oil
- 1 onion, thinly sliced
- 3-4 cloves garlic, minced
- 1 bell pepper, sliced
- 1 cup mushrooms, sliced
- 1/2 cup chicken broth
- 1 tsp sugar
- 2 green onions, chopped (for garnish)
Instructions:
- Marinate the Chicken: In a bowl, combine the chicken pieces with 1 tablespoon of black pepper, soy sauce, oyster sauce, and cornstarch. Mix well and let it marinate for at least 30 minutes.
- Cook the Chicken: Heat the vegetable oil in a large pan or wok over medium-high heat. Add the marinated chicken and stir-fry until it’s browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
- Stir-Fry the Vegetables: In the same pan, add the sliced onion and cook until softened, about 2-3 minutes. Add the garlic and cook for another minute until fragrant. Add the bell pepper and mushrooms, and stir-fry for 3-4 minutes.
- Combine and Simmer: Return the chicken to the pan. Add the chicken broth, the remaining 1 tablespoon of black pepper, and sugar. Stir everything together and let it simmer for about 5 minutes, or until the sauce has thickened slightly.
- Garnish and Serve: Garnish with chopped green onions and serve hot over rice or noodles.
