BEANS COOKED WITH HAM HOCKS

Few dishes rival the satisfaction of a well-prepared beans and ham hocks recipe. The hearty, smoky flavor of the ham hocks combined with creamy beans is simply heavenly.

**Ingredients:**
– 1 lb. Great Northern beans
– 2 liters water
– 2 lbs. smoked ham hocks
– 2 tsp. Herbs de Provence
– 1 tbsp. olive oil
– 1 cup chopped onion
– 1 cup chopped celery
– 2/3 cup chopped carrots
– 2 tsp. minced garlic
– Salt and pepper to taste
– Parsley for garnish

Instructions:**
1. In a pot, bring water to a boil. Remove from heat, add beans, and soak for 2 hours.
2. In a large pot, combine 2 liters of water, ham hocks, and Herbs de Provence. Bring to a boil, then reduce heat, cover, and simmer for 1 hour.
3. In a skillet, sauté onion, celery, and carrots in olive oil over medium heat until softened.
4. Add sautéed vegetables and drained beans to the pot with ham hock broth. Bring to a boil, then simmer covered for 40 minutes.
5. Remove ham hocks, cut off any meat, and return meat to the pot. Discard remaining ham hock.
6. Season with salt and pepper to taste, garnish with parsley, and serve.
