Ingredients:
2 cups rhubarb, chopped
1 cup all-purpose flour
3/4 cup brown sugar
1/2 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter, melted
1/2 cup milk
1 teaspoon vanilla extract
1 large egg
1 cup boiling water
2 tablespoons brown sugar (for topping)
Directions:
Preheat oven to 350°F (175°C). Grease a baking dish.
Spread the chopped rhubarb evenly in the bottom of the dish.
In a bowl, whisk together flour, granulated sugar, baking powder, and salt.
Add melted butter, milk, vanilla extract, and egg. Mix until smooth.
Spoon the batter over the rhubarb.
Sprinkle 2 tablespoons brown sugar over the top.
Carefully pour boiling water over the batter without stirring.
Bake for 40–45 minutes until golden and bubbling.
Let cool slightly before serving warm.
