Baked Salmon in Foil with Asparagus and Lemon Garlic Sauce

Ingredients:
- 4 salmon fillets (skin-on or skinless)
- 1 bunch of asparagus, trimmed
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1 lemon (zested and juiced)
- 1 tablespoon butter, melted
- Fresh parsley for garnish (optional)
Instructions:
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Prepare the Foil: Lay out four pieces of aluminum foil, large enough to wrap each salmon fillet. Place each salmon fillet in the center of a piece of foil.
- Season the Salmon: Drizzle a bit of olive oil over the salmon fillets. Season with salt and pepper on both sides.
- Prepare the Asparagus: Place the trimmed asparagus around the salmon fillets on the foil. Drizzle a little olive oil over the asparagus and season with salt and pepper.
- Make the Lemon Garlic Sauce: In a small bowl, combine the minced garlic, lemon zest, lemon juice, and melted butter. Stir well.
- Add the Sauce: Spoon the lemon garlic mixture evenly over the salmon fillets and asparagus.
- Wrap the Foil: Fold the foil over the salmon and asparagus, sealing the edges to create a packet. This will help steam the fish and vegetables.
- Bake: Place the foil packets on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Serve: Carefully open the foil packets, being cautious of hot steam. Garnish with fresh parsley, if desired, and serve immediately.
Tips:
- For extra flavor, you can add a few slices of lemon inside the foil packet.
- If you like your asparagus a bit crispy, remove the foil in the last 5 minutes of baking.
