BAKED PARMESAN YELLOW SQUASH

Ingredients:
- 2 medium yellow squash, sliced into 1/4-inch rounds
- 2 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions:
- Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
- Prepare Squash: Wash and dry the yellow squash. Slice them into 1/4-inch thick rounds and place them in a large bowl.
- Season Squash: Drizzle the olive oil over the squash slices and toss to coat them evenly.
- Mix Parmesan and Seasonings: In a small bowl, mix the grated Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- Coat Squash: Dip each squash slice into the Parmesan mixture, pressing lightly to ensure the cheese sticks to both sides. Arrange the coated squash slices in a single layer on the prepared baking sheet.
- Bake: Bake in the preheated oven for about 20-25 minutes, or until the squash is tender and the Parmesan coating is golden brown and crispy.
- Garnish and Serve: Remove from the oven and sprinkle with fresh parsley if desired. Serve immediately.
