BAKED PARMESAN YELLOW SQUASH

Ingredients:

  • 2 medium yellow squash, sliced into 1/4-inch rounds
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. Prepare Squash: Wash and dry the yellow squash. Slice them into 1/4-inch thick rounds and place them in a large bowl.
  3. Season Squash: Drizzle the olive oil over the squash slices and toss to coat them evenly.
  4. Mix Parmesan and Seasonings: In a small bowl, mix the grated Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  5. Coat Squash: Dip each squash slice into the Parmesan mixture, pressing lightly to ensure the cheese sticks to both sides. Arrange the coated squash slices in a single layer on the prepared baking sheet.
  6. Bake: Bake in the preheated oven for about 20-25 minutes, or until the squash is tender and the Parmesan coating is golden brown and crispy.
  7. Garnish and Serve: Remove from the oven and sprinkle with fresh parsley if desired. Serve immediately.
