– 125g brown sugar
– 1 cup Baileys Irish Cream
– 1 teaspoon vanilla extract
– 2 cups self-raising flour
– 1 teaspoon mixed spice (optional)
– 1 egg, beaten
Directions:
Preheat the Oven: Preheat your oven to 160°C (320°F). Grease and line a loaf tin with baking paper.
Combine the Ingredients: In a large mixing bowl, combine the mixed dried fruit, brown sugar, Baileys Irish Cream, and vanilla extract. Stir well to combine and allow the mixture to sit for about 10 minutes to let the flavors meld.
Add the Dry Ingredients: Sift in the self-raising flour and mixed spice (if using) into the fruit mixture. Gently fold in the beaten egg until just combined, being careful not to overmix.
Pour into the Tin: Pour the batter into the prepared loaf tin, smoothing the top with a spatula.
Bake the Loaf: Bake in the preheated oven for 50-60 minutes, or until a skewer inserted into the center comes out clean. If the top is browning too quickly, cover it loosely with aluminum foil.
