🥑 Diabetes-Friendly Avocado Caprese Salad

Ingredients

1 medium avocado, sliced
2 medium tomatoes, sliced
100 g (3½ oz) fresh mozzarella, preferably part-skim
1–2 tbsp fresh basil, chopped or whole leaves
1 tbsp extra-virgin olive oil
1 tbsp balsamic vinegar (choose one without added sugar)
Black pepper, to taste
Small pinch of salt

Instructions

Arrange tomato, avocado, and mozzarella slices on a plate.
Scatter fresh basil over the top.
Drizzle with olive oil and balsamic vinegar.
Season lightly with black pepper and salt.
Serve immediately.
Why it’s diabetes-friendly
Very low in added sugar and relatively low in carbohydrates.
Avocado and olive oil provide healthy unsaturated fats.
Mozzarella adds protein and helps make the salad more satisfying.
Tomatoes provide fiber and micronutrients without a large carbohydrate load.

Tip: For an even more balanced meal, add grilled chicken, tuna, boiled eggs, or chickpeas. If you’re watching carbohydrates closely, skip sweetened balsamic glaze—regular balsamic vinegar is a better choice.
