Ingredients
For the Muffins
– 190 g all-purpose flour
– 100 g granulated sugar
– 1½ tsp baking powder
– ½ tsp baking soda
– ½ tsp ground cinnamon
– ¼ tsp salt
– 1 large egg
– 120 ml milk
– 80 ml vegetable oil or melted butter
– 1 tsp vanilla extract
– 1½ cups diced apples (about 2 medium apples)
– 1 tbsp lemon juice
Optional Topping
– 1 tbsp brown sugar
– ¼ tsp cinnamon
– A few small apple pieces
Instructions
1. Preheat the oven to 190°C / 375°F and line a muffin tin with paper liners.
2. Peel and dice the apples into small pieces. Toss them with the lemon juice.
3. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
4. In another bowl, whisk the egg, milk, oil, and vanilla until combined.
5. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix.
6. Fold in the diced apples.
7. Divide the batter evenly among 6 muffin cups, filling each about ¾ full.
8. Top with a few apple pieces. If desired, sprinkle with brown sugar and cinnamon.
9. Bake for 20–25 minutes, until golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.
10. Let the muffins cool for 5–10 minutes before serving.
Result
Golden and lightly crisp on the outside, soft and moist inside, with delicious pieces of apple throughout and a warm cinnamon aroma.
Tip
Don’t overmix the batter. A few small lumps are perfectly fine and will help keep the muffins soft and fluffy.
