Ingredients
For the Muffins
– 190 g all-purpose flour
– 100 g granulated sugar
– 1½ tsp baking powder
– ½ tsp baking soda
– ½ tsp ground cinnamon
– ¼ tsp salt
– 1 large egg
– 120 ml milk
– 80 ml vegetable oil or melted butter
– 1 tsp vanilla extract
– 1½ cups diced apples (about 2 medium apples)
– 1 tbsp lemon juice
Optional Topping
– 1 tbsp brown sugar
– ¼ tsp cinnamon
– A few small apple pieces
Instructions
- Preheat the oven to 190°C / 375°F and line a muffin tin with paper liners.
- Peel and dice the apples into small pieces. Toss them with the lemon juice.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, whisk the egg, milk, oil, and vanilla until combined.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix.
- Fold in the diced apples.
- Divide the batter evenly among 6 muffin cups, filling each about ¾ full.
- Top with a few apple pieces. If desired, sprinkle with brown sugar and cinnamon.
- Bake for 20–25 minutes, until golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Let the muffins cool for 5–10 minutes before serving.
Result
Golden and lightly crisp on the outside, soft and moist inside, with delicious pieces of apple throughout and a warm cinnamon aroma.
Tip
Don’t overmix the batter. A few small lumps are perfectly fine and will help keep the muffins soft and fluffy.
