Apple Cinnamon Cottage Cheese Mug Cake

Ingredients (makes 1 mug cake):


¼ cup cottage cheese, blended smooth (60 ml | 55 g)
1 large egg (≈50 ml | 55 g without shell)
2 tbsp oat flour (30 ml | 15 g) or almond flour for lower carbs (14 g)
2 tbsp finely diced apple (30 ml | 25 g)
1 tsp honey or maple syrup optional (5 ml | 7 g honey | 6 g maple syrup)
½ tsp cinnamon (1 g)
¼ tsp baking powder (1 g)
Pinch of nutmeg (0.5 g)
Pinch of salt (0.5 g)
Optional topping: 2 tbsp Greek yogurt (30 ml | 30 g) + ½ tsp maple syrup (3 g) + cinnamon sprinkle (0.5 g)

Directions:


Step 1: Blend & Mix
Blend cottage cheese until smooth. In a microwave-safe mug, whisk cottage cheese and egg together with honey or maple syrup if using, until creamy.

Step 2: Add Dry Ingredients
Stir in oat flour or almond flour, baking powder, cinnamon, nutmeg, and salt. Mix gently until smooth. Fold in diced apple pieces.

Step 3: Cook
Microwave 60–90 seconds until fluffy and set in the center. Do not overcook.

Step 4: Cool & Top
Rest 1–2 minutes, add Greek yogurt if using, drizzle maple syrup, and sprinkle a touch of cinnamon.

Tips for Success
Let batter rest 1 minute before cooking for a better rise.
Cut apple very small so texture stays soft.
If center looks wet, microwave 10 extra seconds only.

Variations
Extra apple punch: sauté apple 2 minutes with a pinch of cinnamon (1 g) before adding.
Dessert vibes: add a tiny splash of lemon juice (2 ml) to brighten flavor.
Lower carb: skip honey/maple and use almond flour.

Storage
Best eaten fresh.
If needed: fridge up to 2 days, reheat 20–30 seconds microwave to soften.
