Apple cake with Golden Delicious apples

INGREDIENTS

  • 3 eggs (M)
  • 150 g sugar
  • 150 g soft butter
  • 200 g self-raising flour
  • 2 tsp vanilla sugar
  • 1 tsp zest of a lemon
  • 1 pinch of salt

For the filling

  • 2-3 Golden Delicious or Delbar, cleaned 250 grams
  • 1 tsp cinnamon

Also needed

  • springform pan or cake tin of approx. 18 cm or suitable for the airfryer
  • mixer or food processor

PREPARATION

Weigh the ingredients and let them come to room temperature. The butter and eggs are best taken out of the fridge the night before or the morning before.

Grease the mold with butter and dust with a little flour. Knock out the excess.

Peel the apples, cut them into pieces of about 1 or 2 cm. Mix the cinnamon with 1 tablespoon of the flour and mix this through the apple cubes. The flour will ensure that the apples do not immediately sink to the bottom of your cake.
Scrub the lemon clean under running water and grate the peel.

In a mixing bowl, beat the butter with the sugar and vanilla sugar with a mixer until it is light yellow in color. Then add the first egg and mix it in completely before adding the next.
Sift the flour with the salt and mix it in parts with a spatula into the batter.
Add the apples to the batter. Spoon the batter into the mold and smooth the top.

Baking in the airfryer
Preheat the airfryer to 150 o C.
Place the cake in the basket and bake for about 45 minutes. Check after 40 minutes to make sure it is not cooking too fast. If necessary, lower the temperature to 140 o C.

Baking in the oven
Preheat the oven to 180 o C (160 o C fan).
Place the baking tin on a rack in the middle of the oven and bake the cake for 60 minutes.

To check if the cake is done, stick a skewer in it. If it comes out clean, the cake is done. If not, give it a few more minutes.

Remove the pan from the airfryer/oven and let it sit for 5-10 minutes before removing the pan. Let the cake cool completely on the rack.
