Air Fryer Stuffed Mushrooms by Tracy

Ingredients:**
* 9-12 large mushrooms
* 1/2 cup ricotta cheese
* 3-5 garlic cloves, minced
* 1/4 cup baby spinach, chopped
* 3-5 fresh basil leaves, sliced (save some for garnish)
* 1/2 cup shredded mozzarella cheese
* Salt and black pepper to taste
* 1 cup marinara sauce

## **Instructions:**
1. **Prepare Mushrooms:** Clean mushrooms with a damp paper towel and remove stems. Set aside.
2. **Make Stuffing:** In a bowl, mix ricotta cheese, minced garlic, chopped spinach, sliced basil, 1/4 cup shredded mozzarella, salt, and pepper.
3. **Stuff Mushrooms:** Fill each mushroom with a heaping spoonful of the cheese mixture.
4. **Top Mushrooms:** Add a teaspoon of marinara sauce and sprinkle more mozzarella on top.
5. **Air Fry:** Preheat air fryer to 400°F (200°C). Place stuffed mushrooms in the basket and air fry for 5-7 minutes, until the cheese is bubbly.
6. **Serve:** Transfer mushrooms to a serving dish, garnish with sliced basil, and serve with extra marinara sauce for dipping.
