Ingredients
- 1 lb boneless, skinless chicken breast or thighs, cut into 1-inch pieces
- 2 tbsp olive oil
- 3 cloves garlic, minced
- Zest of 1 lemon
- Juice of 1 lemon (about 2–3 tbsp)
- 1 tsp dried oregano (or Italian seasoning)
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- Optional: 1 tsp honey or maple syrup (for a touch of sweetness)
- Optional: chopped parsley for garnish
Instructions
1. Marinate the Chicken
- In a bowl, combine:
- olive oil
- minced garlic
- lemon zest + lemon juice
- oregano
- paprika
- salt + pepper
- (optional honey)
- Add chicken pieces and toss until evenly coated.
- Let marinate 10–30 minutes (or up to 2 hours in the fridge).
2. Air Fry the Chicken
- Preheat air fryer to 400°F (if your model needs preheating).
- Place chicken bites in a single layer in the basket.
- Cook 8–10 minutes, shaking halfway through.
- Cook 1–2 more minutes if needed until internal temperature reaches 165°F.
3. Optional Lemon Garlic Sauce
For extra lemony garlic flavor, mix:
- 1 tbsp butter
- 1 tbsp lemon juice
- 1 clove garlic, minced
- pinch of salt
Microwave 20 seconds or melt in a pan, then toss chicken bites in the sauce.
