Air fryer Giant Zucchini Parmesan

Ingredients:

  • 1 large zucchini (sliced lengthwise into ½-inch thick slabs)
  • 1 cup breadcrumbs (Panko or Italian-seasoned)
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 eggs (beaten)
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Olive oil spray
  • Salt and pepper to taste

Instructions:

  1. Prepare the Zucchini:
    • Lightly sprinkle the zucchini slices with salt. Let them sit for 10 minutes to draw out excess moisture, then pat them dry with a paper towel.
  2. Set Up Coating Station:
    • Mix breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning in one bowl.
    • Beat eggs in another bowl.
  3. Bread the Zucchini:
    • Dip each zucchini slice into the beaten eggs, then coat with the breadcrumb mixture. Press gently to ensure an even coating.
  4. Air Fry:
    • Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
    • Arrange the zucchini slices in a single layer in the air fryer basket. Spray lightly with olive oil.
    • Cook for 8-10 minutes, flipping halfway, until golden and crispy.
  5. Add Sauce and Cheese:
    • Spoon a layer of marinara sauce over each zucchini slice, then sprinkle with shredded mozzarella.
    • Air fry for another 2-3 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Remove from the air fryer and garnish with extra Parmesan and fresh basil, if desired. Serve warm.
