Air fryer Fluffy Potato Dinner Rolls

Ingredients:

  • 1 cup warm mashed potatoes (no lumps)
  • 1/2 cup warm milk (110°F/43°C)
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons sugar
  • 1 large egg, room temperature
  • 1 1/2 teaspoons salt
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 3 cups all-purpose flour (plus extra for kneading)
  • Cooking spray or extra melted butter for greasing

Instructions:

  1. Activate Yeast:
    • In a small bowl, combine warm milk and sugar. Sprinkle the yeast on top and let sit for 5–10 minutes until frothy.
  2. Prepare Dough:
    • In a large mixing bowl, combine mashed potatoes, melted butter, egg, and salt. Mix well.
    • Add the yeast mixture to the bowl and stir to combine.
    • Gradually add the flour, mixing until a sticky dough forms.
  3. Knead Dough:
    • Turn the dough onto a lightly floured surface and knead for about 8–10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5–6 minutes.
  4. First Rise:
    • Place the dough in a greased bowl, cover with a clean towel or plastic wrap, and let it rise in a warm place for 1–1.5 hours, or until doubled in size.
  5. Shape Rolls:
    • Punch down the dough and divide it into 12 equal pieces. Shape each piece into a smooth ball and place them on a parchment-lined air fryer basket or tray, leaving a little space between them.
  6. Second Rise:
    • Cover the rolls lightly and let them rise for another 30 minutes until puffy.
  7. Cook Rolls:
    • Preheat the air fryer to 320°F (160°C) for 3 minutes. Lightly brush the rolls with melted butter.
    • Air fry in batches if necessary, for 10–12 minutes or until golden brown and cooked through. Rotate the tray halfway if needed.
  8. Serve:
    • Let the rolls cool slightly before serving. Brush with more butter for extra flavor, if desired.
