Air Fryer Chicken Quesadilla

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 4 medium-sized flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced onion
  • 1/4 cup chopped fresh cilantro
  • Cooking spray

Instructions:

  1. Preheat your air fryer to 400°F (200°C).
  2. In a small bowl, mix the olive oil, chili powder, cumin, salt, and pepper. Brush this mixture over both sides of the chicken breasts.
  3. Place the seasoned chicken breasts in the air fryer basket. Cook for about 8-10 minutes on each side or until the chicken reaches an internal temperature of 165°F (74°C). Cooking times may vary depending on your air fryer, so use a meat thermometer to be sure.
  4. Once the chicken is cooked, remove it from the air fryer and let it rest for a few minutes before slicing it into thin strips.
  5. Lay out two of the tortillas and sprinkle half of the shredded cheddar cheese on each. Then, add half of the sliced chicken, diced red bell pepper, diced onion, and chopped cilantro on each tortilla.
  6. Top each quesadilla with the remaining two tortillas.
  7. Lightly spray the air fryer basket with cooking spray to prevent sticking. Place one quesadilla in the basket and cook at 350°F (175°C) for 5-6 minutes, flipping it halfway through. Repeat with the second quesadilla.
  8. Once the quesadillas are crispy and the cheese is melted, remove them from the air fryer.
  9. Allow the quesadillas to cool for a minute or two before cutting them into wedges. Serve with your favorite dipping sauces, such as salsa, guacamole, or sour cream…
