Air Fryer Caprice Stuffed Chicken Breast

Ingredients:
- 2 boneless, skinless chicken breasts
- 4 slices of fresh mozzarella cheese
- 2 medium-sized tomatoes, thinly sliced
- 1/4 cup fresh basil leaves
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1/4 cup balsamic glaze (store-bought or homemade)
Instructions:
- Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C).
- Prepare the Chicken:
- Lay each chicken breast flat on a cutting board.
- Using a sharp knife, cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
- Season the inside and outside of each chicken breast with salt and pepper.
- Stuff the Chicken:
- Stuff each chicken breast with 2 slices of mozzarella cheese, sliced tomatoes, and fresh basil leaves.
- Press down gently to secure the stuffing.
- Close the Chicken:
- Close the chicken breasts, securing the openings with toothpicks if necessary to keep the stuffing inside.
- Season the Chicken:
- Brush the outside of each chicken breast with olive oil and season with a little more salt and pepper, if desired.
- Air Fry the Chicken:
- Place the stuffed chicken breasts in the air fryer basket in a single layer, making sure they are not touching each other.
- Cook for 20-25 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
- Serve:
- Once cooked, remove the chicken from the air fryer and let it rest for a few minutes before serving.
- Drizzle with balsamic glaze before serving.
