Air Fryer Caprice Stuffed Chicken Breast


  • 2 boneless, skinless chicken breasts
  • 4 slices of fresh mozzarella cheese
  • 2 medium-sized tomatoes, thinly sliced
  • 1/4 cup fresh basil leaves
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1/4 cup balsamic glaze (store-bought or homemade)


  1. Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C).
  2. Prepare the Chicken:
    • Lay each chicken breast flat on a cutting board.
    • Using a sharp knife, cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
    • Season the inside and outside of each chicken breast with salt and pepper.
  3. Stuff the Chicken:
    • Stuff each chicken breast with 2 slices of mozzarella cheese, sliced tomatoes, and fresh basil leaves.
    • Press down gently to secure the stuffing.
  4. Close the Chicken:
    • Close the chicken breasts, securing the openings with toothpicks if necessary to keep the stuffing inside.
  5. Season the Chicken:
    • Brush the outside of each chicken breast with olive oil and season with a little more salt and pepper, if desired.
  6. Air Fry the Chicken:
    • Place the stuffed chicken breasts in the air fryer basket in a single layer, making sure they are not touching each other.
    • Cook for 20-25 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
  7. Serve:
    • Once cooked, remove the chicken from the air fryer and let it rest for a few minutes before serving.
    • Drizzle with balsamic glaze before serving.
