Ingredients

  • 2 cups (500 ml) water, warm
  • 1 packet (10 g) dry yeast
  • 3 tablespoons (38 g) sugar
  • 3 ½ cups (440 g) all-purpose flour
  • 1 cup (200 ml) milk, warm
  • 4 ½ cups (600 g) all-purpose flour (additional)
  • 100 g butter, softened
  • 1 teaspoon salt
  • 2 tablespoons (30 ml) vegetable oil
  • 1 cup (about 120 g) cheddar cheese, shredded
  • 1 egg yolk
  • 1 tablespoon (15 ml) milk (for egg wash)

Step-by-Step Instructions

  1. In a large bowl, combine the warm water, dry yeast, sugar, and 3 ½ cups of flour. Mix until smooth and free of lumps. Cover this mixture with a clean kitchen towel and let it ferment in a warm place for about 1 hour or until it has doubled in size.
  2. Once the dough has risen, in a separate bowl, combine the warm milk, the remaining 4 ½ cups of flour, softened butter, salt, and the fermented dough from the first step. Knead the mixture until it becomes smooth and elastic, which usually takes about 8 to 10 minutes.
  3. Drizzle the kneaded dough with vegetable oil, cover, and let it rest for 10 minutes. This resting period helps to relax the gluten, making the dough easier to handle.
  4. Roll out the dough on a floured surface to about ½ inch thick. Use a knife or pastry cutter to cut the dough into squares or circles, depending on your preference.Baked Goods
  5. Place about 1 tablespoon of shredded cheddar cheese in the center of each piece. Fold the dough over to create a pocket, pinching the edges to seal them well.
  6. Transfer the shaped poğaça to a lined baking tray, cover them with a towel, and let them rise for an additional 5 minutes.
  7. Preheat your oven to 180°C (350°F). Brush the tops of the poğaça with the egg wash mixture (egg yolk mixed with 1 tablespoon of milk) for a beautiful golden finish. Bake in the preheated oven for about 20-25 minutes, or until they are golden brown.
