Mediterranean-Style Marinated Chicken

This chicken is so tender, moist and flavor-filled. It is infused with fabulous Mediterranean flavors, lemon, garlic, olive oil, herbs, Dijon mustard. The chicken is marinated prior to cooking.

Ingredients

For the marinade:

  • 1/4 cup (60ml) olive oil
  • the finely grated zest of one lemon
  • 1/2 tsp dried thyme, rubbed
  • 1/2 tsp dried rosemary, rubbed
  • 1/2 tsp dried oregano leaves, rubbed
  • 2 fat cloves of garlic, peeled and minced
  • 1 tsp good Dijon mustard
  • 1/2 tsp fine sea salt
  • 1/4 tsp coarsely ground black pepper

You will also need:

  • 2 pounds boneless, skinless chicken (breasts or thighs)

Instructions

  1. Whisk together all of the marinade ingredients in a container large enough to hold all of your chicken.
  2. If you are using chicken thighs, open them out until they are flat. In both cases (thighs or breasts) pound the meat lightly until it is of even thickness throughout.
  3. Add the chicken pieces to the marinade in the container, turning them to coat each piece well with the marinade. Cover.
  4. Place in the refrigerator to marinate for several hours, or overnight. Alternately you can marinate it for 30 minutes at room temperature.
  5. Grill or broil as desired.
  6. To broil, place onto a pan lined with foil. Broil 6 inches from heat source for 4 to 6 minutes per side (flip after the first 4 to 6 minutes), depending on the thickness of your chicken, until the chicken is cooked through. Cover and let stand/rest for 5 to 7 minutes before serving.
  7. To grill, heat your grill to medium high. Place the chicken on the grill and grill for 4 – 7 minutes per side, depending on the thickness of your chicken. Cover loosely and let stand/rest for 5 to 7 minutes.
  8. When done the chicken juices will run clear and the temperature will read 160*F/71*C.
