Ingredients
The Skewers:
3 large sweet potatoes, peeled and cut into 1.5-inch thick cubes
2 tbsp olive oil
1 tsp smoked paprika
1/2 tsp garlic powder
Salt and black pepper to taste
The Hot Honey Glaze:
1/3 cup honey
1 tbsp balsamic vinegar
1/2 tsp red pepper flakes (adjust for heat)
The Toppings:
1/2 cup feta cheese, crumbled
1/4 cup shelled pistachios, finely chopped
3 tbsp fresh parsley or cilantro, minced
Instructions
Parboil the Potatoes: Bring a large pot of salted water to a boil. Add the sweet potato cubes and cook for 5 minutes just until slightly tender but still firm. Drain and let cool slightly.
Season and Skewer: Toss the sweet potato cubes with olive oil, smoked paprika, garlic powder, salt, and pepper. Carefully thread the cubes tightly onto metal or soaked wooden skewers.
Roast or Grill: Preheat your grill or oven to 400°F (200°C). Cook the skewers for 15 to 20 minutes, turning once, until the edges are beautifully charred and caramelized as shown in image_44d161.jpg.
Make the Glaze: While cooking, whisk the honey, balsamic vinegar, and red pepper flakes in a small saucepan over low heat for 2 minutes until warm and runny.
Garnish and Serve: Arrange the hot skewers on a wooden serving board. Generously drizzle the warm glaze all over. Immediately top with a heavy layer of crumbled feta, chopped pistachios for crunch, and fresh minced herbs.
