🍍🥒 Pineapple Cucumber Salad — Diabetes-Friendly

Ingredients
2 cups cucumber, diced
1 cup fresh pineapple, diced
½ small red onion, thinly sliced
¼ cup fresh cilantro or mint, chopped
2 tbsp lime juice
1 tsp extra-virgin olive oil
½ tsp grated fresh ginger
¼ tsp black pepper
Small pinch of salt
Optional: a little chopped fresh chili for heat
Instructions
Add the cucumber, pineapple, red onion and cilantro/mint to a bowl.
In a small bowl, whisk together lime juice, olive oil, ginger, black pepper and salt.
Pour the dressing over the salad and gently toss.
Refrigerate for 20 minutes before serving.

Use fresh pineapple, rather than canned pineapple in syrup.
Keep the pineapple portion moderate because it contains natural carbohydrate.
Don’t add sugar, honey, or sweetened dressing.
Pair the salad with protein such as grilled chicken, fish, shrimp, or lean beef to make it a more balanced meal.

Approximate per serving: 70–90 calories and 12–16 g carbohydrates, depending on the amount of pineapple used.

Tip: For an even lower-carb version, use ½ cup pineapple and increase the cucumber to 2½–3 cups.
