Ingredients
Beef filling
- 1 lb (450 g) ground beef
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 jalapeño, finely chopped
- 1 tbsp tomato paste
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp chili powder
- ½ tsp oregano
- 1 tsp salt
- ½ tsp black pepper
- ½ cup salsa
- ½ cup water
For the tortillas
- 8 large flour tortillas
- 2 cups shredded Monterey Jack
- 1½ cups sharp cheddar
- ½ cup mozzarella
- 1 cup red enchilada sauce
Topping
- 1 tomato, diced
- ½ red onion, diced
- 1–2 jalapeños, sliced
- Fresh cilantro
- Sour cream
- Lime wedges
🔥 Method
- Cook the beef.
Brown the ground beef in a large skillet over medium-high heat. Drain excess grease. - Build the flavor.
Add onion and jalapeño and cook 3–4 minutes. Add garlic, tomato paste, cumin, smoked paprika, chili powder, oregano, salt and pepper. Cook another minute. - Make it juicy.
Stir in salsa and water. Simmer 5–7 minutes, until the mixture is thick but still moist. This keeps the tortillas from becoming dry. - Add cheese.
Remove from heat and stir in about ½ cup Monterey Jack + ½ cup cheddar. - Fold the tortillas.
Put roughly ⅓ cup beef filling in the center of each tortilla. Add a little cheese, then fold into a triangle/pocket, similar to the ones in your photo. Place seam-side down in a lightly greased round baking dish or oven-safe skillet. - Sauce + LOTS of cheese.
Spoon enchilada sauce lightly over the tortillas. Cover generously with the remaining Monterey Jack, cheddar and mozzarella. - Bake.
Bake at 400°F / 200°C for 15–20 minutes, until bubbling and deeply golden around the edges. - Finish like the photo.
Scatter over diced tomato, red onion and plenty of sliced jalapeño. Add cilantro and a squeeze of lime.
⭐ The secret to making it REALLY good
Use Monterey Jack + sharp cheddar + mozzarella rather than one cheese. The Jack gives meltiness, cheddar gives flavor, and mozzarella gives that dramatic cheese pull. The folded-pocket technique also gives you crispy tortilla edges while keeping the beef juicy inside. Similar folded tortilla preparations use a beef-and-cheese filling and bake around 200°C.
