Ingredients
- 2 cups (500 ml) water, warm
- 1 packet (10 g) dry yeast
- 3 tablespoons (38 g) sugar
- 3 ½ cups (440 g) all-purpose flour
- 1 cup (200 ml) milk, warm
- 4 ½ cups (600 g) all-purpose flour (additional)
- 100 g butter, softened
- 1 teaspoon salt
- 2 tablespoons (30 ml) vegetable oil
- 1 cup (about 120 g) cheddar cheese, shredded
- 1 egg yolk
- 1 tablespoon (15 ml) milk (for egg wash)
Step-by-Step Instructions
- In a large bowl, combine the warm water, dry yeast, sugar, and 3 ½ cups of flour. Mix until smooth and free of lumps. Cover this mixture with a clean kitchen towel and let it ferment in a warm place for about 1 hour or until it has doubled in size.
- Once the dough has risen, in a separate bowl, combine the warm milk, the remaining 4 ½ cups of flour, softened butter, salt, and the fermented dough from the first step. Knead the mixture until it becomes smooth and elastic, which usually takes about 8 to 10 minutes.
- Drizzle the kneaded dough with vegetable oil, cover, and let it rest for 10 minutes. This resting period helps to relax the gluten, making the dough easier to handle.
- Roll out the dough on a floured surface to about ½ inch thick. Use a knife or pastry cutter to cut the dough into squares or circles, depending on your preference.Baked Goods
- Place about 1 tablespoon of shredded cheddar cheese in the center of each piece. Fold the dough over to create a pocket, pinching the edges to seal them well.
- Transfer the shaped poğaça to a lined baking tray, cover them with a towel, and let them rise for an additional 5 minutes.
- Preheat your oven to 180°C (350°F). Brush the tops of the poğaça with the egg wash mixture (egg yolk mixed with 1 tablespoon of milk) for a beautiful golden finish. Bake in the preheated oven for about 20-25 minutes, or until they are golden brown.
