Salmon Patties

Ingredients (makes 4–6 patties):

  • 1 can (14–15 oz / 400–425 g) salmon, drained
  • 1 egg
  • ¼ cup finely chopped onion
  • 2 tbsp chopped fresh parsley or coriander
  • 1 tsp lemon juice
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • ¼ tsp salt (optional)
  • 2–3 tbsp almond flour or ground oats
  • 1 tsp olive oil for cooking

Instructions:

  1. Remove salmon bones/skin if desired and flake the salmon.
  2. Mix salmon, egg, onion, herbs, lemon juice, and seasonings.
  3. Add almond flour gradually until the mixture holds together.
  4. Form into 4–6 patties.
  5. Heat olive oil in a non-stick pan over medium heat.
  6. Cook patties about 3–4 minutes per side, until golden and cooked through.
  7. Serve with a large salad or steamed vegetables.

For diabetes: Avoid adding breadcrumbs or regular flour, and skip sugary sauces. A spoonful of plain unsweetened Greek yogurt mixed with lemon and herbs makes a good topping.
