Ingredients — 4 cups
- 1 box sugar-free Salted Caramel Crunch Cheesecake Jell-O pudding mix
- 1½ cups unsweetened almond milk
- 1 cup nonfat Greek yogurt
- 1 scoop vanilla protein powder
- ½ tsp vanilla extract
- Pinch of sea salt
- 2 tbsp sugar-free caramel sauce
- ¼ cup chopped sugar-free caramel/toffee pieces or chopped nuts
- Optional: ½ cup light whipped topping for extra fluffiness
Instructions
- Add the almond milk and sugar-free cheesecake mix to a large bowl.
- Whisk for about 2 minutes, until it starts to thicken.
- Add Greek yogurt, protein powder, vanilla, sea salt, and caramel sauce.
- Whisk until completely smooth and creamy.
- Fold in the whipped topping if using.
- Gently mix in half of the chopped caramel/toffee pieces.
- Divide the mixture between 4 small cups.
- Refrigerate for at least 1–2 hours until thick and chilled.
- Before serving, drizzle with a little sugar-free caramel sauce and sprinkle with the remaining crunchy topping.
