Peach crêpes baked in a creamy sauce –

📝 Ingredients:

For the pancakes:

▪️ 1 cup wheat flour

▪️ 1 cup milk

▪️ 1 egg

▪️ A pinch of salt

▪️ 2 tablespoons oil for frying

Filling:

▪️ 500 g fresh or canned peaches

▪️ 2 tablespoons sugar

▪️ 1 teaspoon cinnamon (optional)

Whipped cream sauce:

▪️ 200 ml 30% cream

▪️ 2 tablespoons sugar

▪️ 1 teaspoon vanilla extract

▪️ 1 egg

For the top:

▪️ 2 tablespoons butter

👩 🍳 Preparation:

1️⃣ Mix flour, milk, egg, and salt until a smooth pancake batter forms. Fry thin pancakes in a preheated pan.

2️⃣ Cut the peaches into cubes, mix with sugar and optionally cinnamon.

3️⃣ For each pancake, spread a portion of the fruit, roll in a roll or place in an envelope and arrange in a greased dish.

4️⃣ Prepare the sauce by mixing cream, sugar, egg, and vanilla. Pour over the pancakes.

5️⃣ Brush the top with butter and bake at 180°C for about 25 minutes, until the sauce slightly thickens and turns golden.

6️⃣ Serve warm, you can decorate with powdered sugar, mint, or serve with vanilla ice cream.
