Marinated Cucumber Avocado Salad 

Ingredients:

2 large cucumbers, sliced

2 ripe avocados, diced

¼ red onion, thinly sliced

2 tbsp fresh dill or parsley, chopped

2 tbsp olive oil

1 tbsp lemon juice

1 tbsp apple cider vinegar

1 tsp Dijon mustard (optional)

1 small garlic clove, minced

½ tsp salt (or to taste)

¼ tsp black pepper

¼ tsp red pepper flakes (optional)

Instructions:

In a small bowl, whisk together the olive oil, lemon juice, apple cider vinegar, Dijon mustard, garlic, salt, pepper, and red pepper flakes.

Add the cucumbers, red onion, and fresh herbs to a large bowl.

Pour the dressing over the vegetables and toss gently.

Fold in the avocado last to keep it creamy and intact.

Chill for 10–15 minutes before serving, if desired.

Great with: Grilled chicken, salmon, steak, sandwiches, wraps, or toasted bread.

💚 Tip: For the best texture, add the avocado just before serving if you’re making it ahead.
