Ingredients

Cheesecake Protein Filling

  • 1½ cups (360 g) Greek yogurt (thick, plain)
  • 8 oz (225 g) light cream cheese, softened
  • 1–2 scoops vanilla protein powder
  • 2–3 tbsp honey, maple syrup, or keto sweetener
  • 1 tsp vanilla extract

Strawberry Layer

  • 1½ cups fresh strawberries, finely chopped
  • 1 tbsp lemon juice
  • 1 tbsp sweetener (optional)

Shortcake “Crust” Rolls

  • 6 large low-carb tortillas OR high-protein wraps
  • 1 tbsp melted butter (optional, for brushing)

Optional Topping

  • Crushed graham crackers or keto cookie crumbs
  • Extra sliced strawberries
  • Light whipped cream or sugar-free drizzle

Instructions

1. Prep strawberries

Mix chopped strawberries with lemon juice and sweetener. Let sit 10 minutes until juicy.


2. Make cheesecake filling

In a bowl, beat cream cheese until smooth.
Add Greek yogurt, protein powder, vanilla, and sweetener.
Mix until thick, creamy, and spreadable.


3. Assemble rolls

  • Lay out tortillas.
  • Spread a thick layer of cheesecake filling.
  • Add a line of strawberries on one side.
  • Roll tightly like a burrito.

4. Optional crisp step

Brush lightly with butter and pan-sear for 1–2 minutes per side for a “shortcake crust” vibe.


5. Chill

Refrigerate 30–60 minutes for best slicing and texture.
