- 1½ cups fresh strawberries, finely chopped
- 1 tbsp lemon juice
- 1 tbsp sweetener (optional)
Shortcake “Crust” Rolls
- 6 large low-carb tortillas OR high-protein wraps
- 1 tbsp melted butter (optional, for brushing)
Optional Topping
- Crushed graham crackers or keto cookie crumbs
- Extra sliced strawberries
- Light whipped cream or sugar-free drizzle
Instructions
1. Prep strawberries
Mix chopped strawberries with lemon juice and sweetener. Let sit 10 minutes until juicy.
2. Make cheesecake filling
In a bowl, beat cream cheese until smooth.
Add Greek yogurt, protein powder, vanilla, and sweetener.
Mix until thick, creamy, and spreadable.
3. Assemble rolls
- Lay out tortillas.
- Spread a thick layer of cheesecake filling.
- Add a line of strawberries on one side.
- Roll tightly like a burrito.
4. Optional crisp step
Brush lightly with butter and pan-sear for 1–2 minutes per side for a “shortcake crust” vibe.
