Lemon Ginger Turmeric Gelatin Gummies

Ingredients

  • 1 cup water
  • 2 tbsp fresh lemon juice
  • 2 tbsp honey
  • ½ tsp ground turmeric
  • ¼ tsp ground ginger
  • 2½ tbsp unflavored gelatin

Instructions

  1. Pour the water into a small saucepan and warm over low heat. Do not boil.
  2. Stir in the lemon juice, honey, turmeric, and ginger until well combined.
  3. Gradually sprinkle the gelatin over the liquid while whisking continuously to prevent lumps.
  4. Continue whisking for 2–3 minutes until the gelatin is completely dissolved.
  5. Remove from heat and let the mixture cool slightly.
  6. Pour into silicone molds or a small glass dish.
  7. Refrigerate for 1–2 hours, or until firm.
  8. Remove from the molds (or cut into squares if using a dish).

Storage

  • Store in an airtight container in the refrigerator for up to 1 week.

Optional Add-Ins

  • A pinch of black pepper (often paired with turmeric).
  • 1 tsp grated fresh ginger instead of ground ginger.
  • Orange juice in place of some of the water for extra flavor.

Yield: About 20–24 small gummies, depending on the size of the molds.
