
Lemon Ginger Turmeric Gelatin Gummies
Ingredients
- 1 cup water
- 2 tbsp fresh lemon juice
- 2 tbsp honey
- ½ tsp ground turmeric
- ¼ tsp ground ginger
- 2½ tbsp unflavored gelatin
Instructions
- Pour the water into a small saucepan and warm over low heat. Do not boil.
- Stir in the lemon juice, honey, turmeric, and ginger until well combined.
- Gradually sprinkle the gelatin over the liquid while whisking continuously to prevent lumps.
- Continue whisking for 2–3 minutes until the gelatin is completely dissolved.
- Remove from heat and let the mixture cool slightly.
- Pour into silicone molds or a small glass dish.
- Refrigerate for 1–2 hours, or until firm.
- Remove from the molds (or cut into squares if using a dish).
Storage
- Store in an airtight container in the refrigerator for up to 1 week.
Optional Add-Ins
- A pinch of black pepper (often paired with turmeric).
- 1 tsp grated fresh ginger instead of ground ginger.
- Orange juice in place of some of the water for extra flavor.
Yield: About 20–24 small gummies, depending on the size of the molds.
