Ingredients
- 1 ½ cups graham cracker crumbs divided
- 4 tablespoons unsalted butter melted
- 2 cups heavy whipping cream chilled
- 8 ounces cream cheese softened
- ½ cup powdered sugar
- ½ cup key lime juice
- 1 tablespoon key lime zest
- 1 teaspoon vanilla extract
Method
- Mix 1 cup graham cracker crumbs with melted butter. Reserve ½ cup crumbs.
- Press the buttered crumb mixture into the bottom of your serving dish.
- Beat the heavy whipping cream until stiff peaks form.
- In another bowl, beat the cream cheese until smooth.
- Add powdered sugar, lime juice, zest, and vanilla. Beat until creamy.
- Fold the whipped cream into the cream cheese mixture until light and fluffy.
- Spread half the filling over the crumb base.
- Sprinkle with some reserved crumbs.
- Add the remaining filling.
- Top with the rest of the crumbs and extra lime zest.
- Chill for at least 2 hours before serving.

- Use fresh lime juice for the best flavor.
- Chill your bowl and beaters before whipping the cream.
- Do not overmix the whipped cream.
