Ingredients
Dry Ingredients
- 1 cup oat flour
- ½ cup chocolate protein powder
- 2 tbsp cocoa powder
- ½ tsp baking soda
- Pinch of salt
Wet Ingredients
- ⅓ cup natural peanut butter or almond butter
- ¼ cup maple syrup or honey
- 1 egg
- 2 tbsp milk
- 1 tsp vanilla extract
Filling & Mix-Ins
- 10–12 soft caramel candies or protein caramel pieces
- ¼ cup dark chocolate chips
Instructions
- Preheat oven
- Set oven to 350°F (175°C).
- Line a baking tray with parchment paper.
- Make the dough
- Mix dry ingredients in one bowl.
- In another bowl whisk peanut butter, maple syrup, egg, milk, and vanilla.
- Combine wet and dry mixtures until a thick dough forms.
- Fold in chocolate chips.
- Fill the cookies
- Scoop dough balls onto tray.
- Press a caramel into the center of each.
- Cover caramel completely with dough.
- Bake
- Bake 8–10 minutes.
- Cookies should look slightly soft in the middle.
- Cool
- Let rest 10 minutes so the caramel sets slightly.

- Use casein/whey blend protein powder for softer texture
- Add 2 tbsp powdered peanut butter
- Replace caramel candies with high-protein caramel spread
