Directions:
Step 1: Blend & Mix
Blend cottage cheese until smooth. In a microwave-safe mug, whisk cottage cheese and egg together with honey or maple syrup if using, until creamy.
Step 2: Add Dry Ingredients
Stir in oat flour or almond flour, baking powder, cinnamon, nutmeg, and salt. Mix gently until smooth. Fold in diced apple pieces.
Step 3: Cook
Microwave 60–90 seconds until fluffy and set in the center. Do not overcook.
Step 4: Cool & Top
Rest 1–2 minutes, add Greek yogurt if using, drizzle maple syrup, and sprinkle a touch of cinnamon.
Tips for Success
Let batter rest 1 minute before cooking for a better rise.
Cut apple very small so texture stays soft.
If center looks wet, microwave 10 extra seconds only.
