This Roasted Garlic Butter Parmesan Potatoes recipe is a crispy, flavorful side made with golden roasted potatoes, garlic butter, and melted parmesan—perfect for easy dinners, holiday sides, and crowd-pleasing comfort food.
Ingredients
- 2 lbs 900 g baby potatoes (halved)
- 4 tbsp unsalted butter melted
- 4 cloves garlic minced (or 1½ tsp garlic paste)
- 1/3 cup 30 g grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp salt adjust to taste
- 1/2 tsp black pepper
- 1 tsp paprika optional, for color & flavor
- 1 tsp Italian seasoning or dried herbs mix
- 1 tbsp fresh parsley chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prep potatoes:
- Wash and halve the baby potatoes. Pat them dry for better crisping.
- Make garlic butter mix:
- In a large bowl, combine melted butter, olive oil, minced garlic, salt, pepper, paprika, and Italian seasoning.
- Coat potatoes:
- Add potatoes to the bowl and toss well until evenly coated.
- Add Parmesan:
- Sprinkle in the grated Parmesan and toss again so it sticks to the potatoes.
- Arrange for roasting:
- Spread potatoes cut-side down in a single layer on the baking sheet.
- Roast:
- Bake for 35–40 minutes, or until golden brown and crispy on the edges. Flip halfway through for even roasting.
- Finish & serve:
- Remove from oven, sprinkle with fresh parsley, and serve immediately.
