Southern Sweet Onion Casserole

This Southern Sweet Onion Casserole is a rich, creamy, and ultra-comforting side dish made with tender sweet onions baked in a buttery, cheesy sauce and topped with a golden, crispy cracker crust — the perfect crowd-pleaser for holidays, potlucks, and Sunday dinners.

Ingredients

  • 4 large sweet onions Vidalia-style, thinly sliced
  • 3 tablespoons unsalted butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon sugar
  • 1 cup shredded sharp cheddar cheese
  • ½ cup mayonnaise
  • ½ cup sour cream
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 cup crushed buttery crackers
  • 2 tablespoons melted butter for topping

Instructions

  • Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  • Soften the onions:
  • In a large skillet, melt the 3 tablespoons of butter over medium heat. Add sliced onions, salt, pepper, and sugar. Cook 10–12 minutes until onions are tender and lightly golden. Remove from heat.
  • Mix the filling:
  • In a bowl, combine mayonnaise, sour cream, garlic powder, paprika, and shredded cheddar. Stir in the cooked onions until evenly coated.
  • Assemble:
  • Spread the onion mixture into the prepared baking dish.
  • Make the topping:
  • In a small bowl, mix crushed crackers with the melted butter. Sprinkle evenly over the casserole.
  • Bake:
  • Place in oven and bake for 30–35 minutes, until bubbly and golden brown on top.
  • Rest & serve:
  • Let sit for 5 minutes before serving.
