3-Ingredient Overnight Slow Cooker Inside-Out Banana Bread Oatmeal

When I was growing up, banana bread meant one thing: overripe bananas on the counter and the smell of something sweet baking before anyone was fully awake. Someone always sliced it thick, slathered it with butter, and called it breakfast. This 3-Ingredient Overnight Slow Cooker Inside-Out Banana Bread Oatmeal is a little wink to those mornings—but turned completely on its head. Instead of bananas mixed in, they’re tucked upright into a bed of oats, slowly melting and sweetening everything around them as the night goes on. By morning, the bananas are soft and fragrant, the oats creamy and rich, and the whole thing tastes uncannily like banana bread without ever turning on the oven.

This is the kind of breakfast you make when you want to wake up to something warm and ready, no stirring or watching required. Scoop it into bowls while it’s steaming, mash the bananas gently into the oats, and let everyone customize from there. It’s perfect with a splash of milk or cream, maybe a pat of butter, or a drizzle of honey if you’re feeling indulgent. Serve it with coffee and a quiet house, or with kids clamoring for seconds—it works either way.

Servings: 6 servings

Ingredients

3 cups old-fashioned rolled oats

6 ripe bananas, peeled

6 cups milk (or water, or a mix of both)

Directions

Lightly grease the inside of a 4- to 6-quart slow cooker with cooking spray or a bit of butter.

Pour the rolled oats into the slow cooker and spread them out evenly. Slowly pour in the milk, making sure all the oats are moistened.

Stand the peeled bananas upright in the oats, spacing them evenly around the slow cooker. Gently nestle them down so they’re surrounded by oats but still standing.

Cover the slow cooker and cook on LOW for 7 to 8 hours, or overnight, until the oats are tender and creamy and the bananas are very soft.

In the morning, use a spoon to gently mash the bananas into the oatmeal, stirring them through to create a naturally sweet, banana-bread–like flavor throughout.

Serve hot, with optional toppings if desired (butter, cinnamon, chopped nuts, or a splash of milk), or enjoy it just as it is—simple, cozy, and deeply comforting.
