๐ŸŒฎ High-Protein Crispy Chicken Cheese Taquitos

๐Ÿฅฃ Ingredients (makes ~12 taquitos)

  • 2 cups cooked shredded chicken breast
  • 1 cup shredded part-skim mozzarella or cheddar cheese
  • ยฝ cup low-fat cream cheese or Greek yogurt
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt & pepper to taste
  • 12 small whole wheat or low-carb corn tortillas
  • Cooking spray or light oil for baking/frying

๐Ÿ‘ฉโ€๐Ÿณ Instructions

  1. Preheat oven
    To 200ยฐC (400ยฐF). Line a baking sheet with parchment.
  2. Mix filling
    In a bowl, combine shredded chicken, cheese, cream cheese (or Greek yogurt), and spices until well mixed.
  3. Assemble taquitos
    Warm tortillas slightly to make them pliable.
    Spoon about 2โ€“3 tbsp filling on one side of each tortilla and roll tightly.
  4. Bake or fry
    • Bake: Place taquitos seam-side down on the baking sheet, spray lightly with oil, and bake 15โ€“20 minutes until crispy and golden, turning once halfway.
    • Air fryer: Cook at 190ยฐC (375ยฐF) for 12 minutes, flipping halfway.
    • Pan-fry: Cook in a little oil over medium heat, turning to crisp all sides.
  5. Serve
    With salsa, guacamole, or Greek yogurt dip.
