Almond Diabetic Cookies (Low-Carb & Sugar-Free)

🧾 Ingredients
- 2 cups almond flour
- 1/3 cup powdered erythritol (or stevia blend)
- 1 egg
- 1/4 cup butter (softened)
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- Pinch of salt
👩🍳 Instructions
- Preheat oven to 180°C (350°F)
- Mix almond flour, baking powder, and salt
- In another bowl, whisk butter + sweetener until smooth
- Add egg and vanilla, mix well
- Combine dry + wet ingredients into a dough
- Roll into small balls, flatten into cookie shape
- Bake for 10–12 minutes until lightly golden
- Cool before eating (they firm up as they cool)
