🍝 High-Protein Sausage & Mushroom Pasta

🧾 Ingredients

  • 200–250g high-protein pasta (lentil, chickpea, or whole wheat)
  • 250g chicken or turkey sausage (lean, sliced or crumbled)
  • 1Β½ cups mushrooms (sliced)
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup Greek yogurt (for creamy, high-protein sauce)
  • ΒΌ cup grated parmesan cheese
  • 1 tbsp olive oil
  • Β½ tsp black pepper
  • Β½ tsp chili flakes (optional)
  • Salt to taste
  • Splash of pasta water (for sauce consistency)

πŸ”₯ Instructions

  1. Cook pasta
    • Boil according to package instructions
    • Reserve Β½ cup pasta water before draining

  1. Cook sausage
    • Heat oil in a pan
    • Cook sausage until browned and fully cooked
    • Remove and set aside

  1. SautΓ© veggies
    • In the same pan, cook onion, garlic, and mushrooms
    • Cook until mushrooms are soft and slightly golden

  1. Make creamy protein sauce
    • Lower heat
    • Add Greek yogurt + parmesan
    • Stir gently (don’t let it boil to avoid curdling)
    • Add a splash of pasta water to smooth it out

  1. Combine everything
    • Add cooked pasta + sausage back into the pan
    • Toss until well coated

  1. Season & serve
    • Add salt, pepper, chili flakes
    • Serve hot with extra parmesan if desired
