- 200β250g high-protein pasta (lentil, chickpea, or whole wheat)
- 250g chicken or turkey sausage (lean, sliced or crumbled)
- 1Β½ cups mushrooms (sliced)
- 1 small onion (chopped)
- 2 cloves garlic (minced)
- 1 cup Greek yogurt (for creamy, high-protein sauce)
- ΒΌ cup grated parmesan cheese
- 1 tbsp olive oil
- Β½ tsp black pepper
- Β½ tsp chili flakes (optional)
- Salt to taste
- Splash of pasta water (for sauce consistency)
π₯ Instructions
- Cook pasta
- Boil according to package instructions
- Reserve Β½ cup pasta water before draining
- Cook sausage
- Heat oil in a pan
- Cook sausage until browned and fully cooked
- Remove and set aside
- SautΓ© veggies
- In the same pan, cook onion, garlic, and mushrooms
- Cook until mushrooms are soft and slightly golden
- Make creamy protein sauce
- Lower heat
- Add Greek yogurt + parmesan
- Stir gently (donβt let it boil to avoid curdling)
- Add a splash of pasta water to smooth it out
- Combine everything
- Add cooked pasta + sausage back into the pan
- Toss until well coated
- Season & serve
- Add salt, pepper, chili flakes
- Serve hot with extra parmesan if desired
