Diabetic-Friendly Peach Cobbler

Ingredients

Filling:

  • 4 cups fresh or frozen peaches (unsweetened)
  • 2–3 tbsp sweetener (like stevia, monk fruit, or erythritol)
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tbsp cornstarch (or arrowroot for thickening)

Topping:

  • 1 cup almond flour
  • ¼ cup whole wheat flour (optional, for texture)
  • 2 tbsp sweetener
  • 1 tsp baking powder
  • Pinch of salt
  • 1 egg
  • ¼ cup unsweetened almond milk
  • 2 tbsp melted butter or coconut oil

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Prepare filling:
    In a bowl, mix peaches, sweetener, lemon juice, vanilla, cinnamon, and cornstarch.
    Pour into a greased baking dish.
  3. Make topping:
    Mix almond flour, whole wheat flour, sweetener, baking powder, and salt.
    Add egg, almond milk, and melted butter. Stir until a thick batter forms.
  4. Assemble:
    Spoon topping over the peaches (don’t worry if it’s uneven—it spreads while baking).
  5. Bake for 30–40 minutes until golden brown and bubbly.
  6. Cool slightly before serving (this helps it set and lowers glycemic impact).
