Diabetic-Friendly Homemade Ice Cream

This ice cream is low in sugar, creamy, and easy to make at home without causing large blood-sugar spikes.


🧾 Ingredients

  • 1 cup heavy cream (or coconut cream)
  • 1 cup unsweetened almond milk
  • 2–3 tbsp erythritol, monk fruit, or stevia (adjust to taste)
  • 1 tsp vanilla extract
  • Pinch of salt

Optional flavors

1️⃣ Mix ingredients
In a bowl whisk together:

  • heavy cream
  • almond milk
  • sweetener
  • vanilla
  • salt

2️⃣ Add flavor (optional)
Stir in cocoa powder, berries, or nuts.

3️⃣ Freeze
Pour the mixture into a freezer-safe container.

4️⃣ Stir while freezing
Every 30–40 minutes for about 2–3 hours, stir the mixture to keep it creamy.

5️⃣ Serve
Once firm and creamy, scoop and enjoy.


🍦 Quick No-Churn Banana Version

Blend:

  • 2 frozen bananas
  • ΒΌ cup almond milk
  • Β½ tsp vanilla

Freeze 1 hour for soft-serve style ice cream.
