Diabetic-Friendly Egg & Protein Breakfast
Ingredients
- 2 eggs
- 2 egg whites (extra protein, less fat)
- 2 slices turkey bacon or lean ham
- 1 tsp olive oil
- Salt (small pinch)
- Black pepper
- Optional: chopped spinach, tomatoes, or avocado slices
👩🍳 Instructions
1️⃣ Cook the bacon
- Heat a pan on medium heat.
- Cook turkey bacon or lean ham until lightly crisp.
- Remove and set aside.
2️⃣ Make scrambled eggs
- Whisk 1 egg + 2 egg whites.
- Cook in the same pan with ½ tsp olive oil.
- Stir gently until soft and fluffy.
3️⃣ Fry the eggs
- Add remaining ½ tsp olive oil.
- Fry 1 whole egg sunny-side up.
- Sprinkle with black pepper.
4️⃣ Plate the meal
Serve with:
- Scrambled eggs
- Fried egg
- Turkey bacon
- Optional ½ avocado or sautéed spinach
