Creamy “Marry Me” Chicken Soup (Diabetic-Friendly)

Ingredients (4 servings)

Protein & Base

  • 2 tbsp olive oil
  • 2 boneless skinless chicken breasts (or thighs), diced
  • Salt and black pepper to taste

Vegetables

  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup spinach or kale

Flavor Ingredients

  • ½ cup sun-dried tomatoes (preferably without added sugar)
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • ½ tsp chili flakes (optional)

Creamy Soup Base

  • 4 cups low-sodium chicken broth
  • ½ cup heavy cream
  • ¼ cup cream cheese
  • ¼ cup grated parmesan cheese

Instructions

  1. Cook chicken
    • Heat olive oil in a large pot over medium heat.
    • Add chicken, season with salt and pepper, cook until lightly browned.
  2. Add aromatics
    • Stir in onion, garlic, and mushrooms.
    • Cook 3–4 minutes until fragrant.
  3. Add flavor
    • Mix in sun-dried tomatoes, paprika, Italian seasoning, and chili flakes.
  4. Make the soup
    • Pour in chicken broth and bring to a gentle simmer.
    • Cook 10 minutes so flavors blend.
  5. Make it creamy
    • Stir in cream, cream cheese, and parmesan.
    • Mix until smooth and creamy.
  6. Finish
    • Add spinach and cook 2–3 minutes until wilted.
    • Taste and adjust seasoning.
