Ingredients
Potatoes
- 1.5 lbs (about 4–5) baby potatoes or Yukon Gold
- 1–2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- Optional: ½ tsp rosemary or thyme
Caramelized Onions
- 1 large yellow onion, thinly sliced
- 1 tbsp olive oil or butter
- 1 tsp brown sugar (optional but helps caramelize)
- Pinch of salt
To Finish
- 2 tbsp fresh chives, chopped
- Optional: parmesan cheese or sour cream
Instructions
🔹 1. Prepare the Potatoes
- Wash and dry potatoes.
- If using baby potatoes: halve or quarter depending on size.
- In a bowl, toss potatoes with:
- olive oil
- garlic powder
- paprika
- salt & pepper
🔹 2. Air Fry the Potatoes
- Preheat air fryer to 400°F (200°C).
- Place potatoes in a single layer in the basket.
- Cook for 15–20 minutes, shaking halfway through.
- Cook until golden brown and tender.
🔹 3. Caramelize the Onions
- While potatoes cook, heat a skillet over medium heat.
- Add oil/butter and onions.
- Cook 10–15 minutes, stirring occasionally, until soft and golden.
- Add brown sugar (optional) and cook another 2–3 minutes.
- Season with a pinch of salt.
🔹 4. Combine & Serve
- Once potatoes are done, transfer to a serving bowl.
- Top with caramelized onions.
- Sprinkle with fresh chives.
- Optional: add parmesan or a dollop of sour cream.
