Cheesy Taco Soup

🧀🌮 Cheesy Taco Soup (Classic & Crowd-Pleaser)

Ingredients

  • 1 lb ground beef (or turkey)
  • 1 packet taco seasoning (or homemade)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (with juice)
  • 1 can Rotel (tomatoes + green chiles)
  • 1 can black beans, drained & rinsed
  • 1 can corn, drained
  • 3 cups chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 1½–2 cups shredded cheddar or Mexican-blend cheese
  • Salt & pepper to taste

Instructions

  1. Brown ground beef with onion in a large pot. Drain excess fat.
  2. Add garlic and taco seasoning; stir 30 seconds.
  3. Add tomatoes, Rotel, beans, corn, and broth.
  4. Bring to a simmer and cook 15–20 minutes.
  5. Lower heat; stir in cream.
  6. Add cheese gradually, stirring until melted and smooth.
  7. Taste and adjust seasoning.

Toppings (highly encouraged)

  • Sour cream or Greek yogurt
  • Avocado slices
  • Green onions
  • Jalapeños
  • Cilantro

🔥 Variations

Low-Carb / Diabetic-Friendly

  • Skip corn & beans
  • Add cauliflower rice or zucchini
  • Use heavy cream + sharp cheddar
    Still cheesy, fewer carbs.

Slow Cooker

  • Brown meat first
  • Add everything except cheese & cream
  • Cook LOW 6–7 hrs
  • Stir in cheese + cream at the end
