๐ฅฉ Garlic Butter Steak Bites with Potatoes

โ Ingredients:
๐ฅ For the Potatoes:
- 2 cups baby potatoes, halved (or quartered if large)
- 1 tbsp olive oil
- Salt and black pepper, to taste
๐ฅฉ For the Steak Bites:
- 500g (1 lb) sirloin steak (or ribeye), cut into bite-sized cubes
- Salt and pepper, to taste
- 1 tbsp olive oil
๐ง For the Garlic Butter Sauce:
- 3 tbsp butter
- 4 cloves garlic, minced
- 2 tbsp fresh chopped parsley
- Optional: pinch of chili flakes or a squeeze of lemon
๐จโ๐ณ Instructions:
๐น 1. Cook the Potatoes
- Bring a pot of salted water to a boil and cook the halved baby potatoes for 6โ8 minutes until just fork-tender. Drain and pat dry.
- In a large skillet, heat 1 tbsp olive oil over medium-high heat.
- Add the potatoes cut-side down. Cook 5โ7 minutes, flipping occasionally, until golden brown and crispy.
- Season with salt and pepper. Remove from the skillet and set aside.
๐น 2. Cook the Steak Bites
- Pat the steak cubes dry with paper towels (helps with searing).
- Season generously with salt and pepper.
- In the same skillet, heat 1 tbsp olive oil over high heat.
- Add steak bites in a single layer (work in batches if needed). Sear for about 1โ2 minutes per side, until browned but still tender inside.
- Remove steak from skillet and set aside with the potatoes.
๐น 3. Make the Garlic Butter Sauce
- Lower heat to medium.
- Add 3 tbsp butter to the same skillet and let it melt.
- Stir in the minced garlic. Cook for 30โ60 seconds, just until fragrant (donโt let it brown).
- Optional: Add a pinch of chili flakes or a squeeze of lemon juice for a little kick.
๐น 4. Combine & Finish
- Return the potatoes and steak bites to the skillet.
- Toss everything to coat well in the garlic butter.
- Cook for another 1โ2 minutes, just to reheat and combine flavors.
- Sprinkle with chopped parsley before serving.
