Stuffed Pepper Casserole

Ingredients:

1 lb ground beef

1 onion, diced

1 green bell pepper, diced

1 red bell pepper, diced

1 can (14.5 oz) diced tomatoes

1 cup cooked white rice

1 cup shredded cheddar cheese

1 tsp garlic powder

Salt and pepper to taste

Instructions:

1. Preheat oven to 350°F and grease a 9×13 inch baking dish.

2. Cook ground beef in a skillet over medium heat until browned. Drain fat.

3. Add onion, green and red bell peppers; cook until softened.

4. Stir in diced tomatoes, rice, garlic powder, salt, and pepper. Cook 5 minutes.

5. Transfer to baking dish, top with cheese.

6. Bake 25–30 minutes, until cheese is melted and bubbly
